tumbleweeds: musings of a luddite

Feels like forever since i’ve had a reallllllllllly sweet treat since starting the Paleo thing, so this past weekend I decided to try my hand at some “caveman” baking (picture Wilma Flinstone in an apron).

I was able to find most of the ingredients at the Albany Co-op (Coconut flour is my new best friend).  The only things i could not find were palm shortening (used coconut oil) and unsweetened coconut flakes.. no substitute, just did without those in the frosting.  they can be found online of course.  Used Grass-fed butter and pasture raised heavy cream (Robb Wolf Approved).

Anyways, this cake was JUST what I needed!  I really enjoy baking and I had been missing it, so finding sweet recipes that work with paleo is a major plus AND it was freakin delicious!!!!  

Added bonus: no sugar highs and lows and i did not feel the need to overindulge (which often happens when i eat sweets).

Tip: Eat with a side of fruit.. YUM.
